Homemade Khoya Recipe

I wanted to try making homemade khoya since long time, but kept postponing as its very time consuming recipe. However few days back, I planned to make gulab jamun from scratch. Since khoya is one of the main ingredients for making gulab jamun, I made it and also clicked some pictures and decided to share the recipe here. This khoya can also be added in many other desserts/sweets recipes for enhancing the taste and richness of the recipe.

Preparation Time : 5 Minutes
Cooking Time : 45 Minutes


Whole Milk / Full Fat Milk 1 Litre

Preparation Method

Add milk to a heavy bottomed wide pan / Non stick pan and bring it to boil.

Once it starts to boil, reduce the flame to medium and keep stirring once in few minuteand scrape of the  milk solids sticking to the sides of the pan.

The volume of the milk starts to decrease gradually and the consistency becomes thicker.
The colour of the milk starts to change to dark cream in colour.

At a stage bubbles start to appear, from then you have to very careful and start stirring it continuosly so that it doesnt get burnt.

Homemade Khoya Recipe Step 4

On continuos stirring, you will reach a stage where the milk gets thickened well and also it doesnt stick to the sides or bottom of the pan. Thats the consistency of khoya. Immediately turn off the flame and transfer the khoya and allow it to cool down. Transfer the khoya to a clean and dry airtight container and refrigerate them. This khoya can be stored for up to a week.

Always use only whole milk/full fat milk for preparing this khoya
Non-Stick pan will be easier as the milk wont get stuck to the sides much.
Stirring it continuosly once it starts to thicken is very important to prevent it from getting charred.
