Bittergourd Fry Recipe

Bitter gourd fry is a simple to make recipe suggested by my mom. Its been months since I bought bitter gourd. When I went for shopping last week, I saw bittergourd so fresh and green and grabbed couple of them. Made this crispy bitter gourd fry for lunch to serve along with sambar rice. I loved the combo and this version of bitter gourd fry tasted nice with much less bitterness than usual.

Bittergourd Roast Recipe

Cooking Time  15 Minutes
Serves: 2


Bitter Gourd 250 grams
Garlic 5 Pods
Chilli Powder 1.5 Teaspoons
Coriander Powder 1 Teaspoon
Turmeric Powder 1/4 Teaspoon
Salt To Taste
Oil 1 – 2 Tablespoons

Preparation Method
Wash the bitter gourd and slice them into pieces of medium thickness. Soak the sliced bitter gourd in a bowl of warm water with some salt and turmeric. After 5 minutes, drain the water and keep the bitter gourd aside.

Grind Turmeric powder, chilli powder, coriander powder, garlic and salt to a fine paste. Add the ground masala to the bitter gourd and mix well. Marinate them for 5 – 10 minutes.

Heat a dosa pan and drizzle some oil and place the bitter gourd pieces and fry them. Once it is cooked, turn it to the other side and cook till it get roasted. Transfer it to a plate and repeat the same in batches.

While grinding the masala, you can add couple of shallots if preferred.
Spice level can be adjusted according to your taste.
Do not slice the bittergourd too thin as it may get stuck to the pan while frying.
