Pudalangai Bhajji Recipe

This pudalangai fry recipe was introduced by one of my friends in my college. We both tried together once long back. After many years, I tried it recently for evening snack. Its real quick recipe and resembles onion rings. The preparation method is just similar to the usual bhajji. Until I revealed, my hubby couldn’t guess that its made from pudalangai. The whole plate of this crispy fry was vanished in no time. Perfect and easy tea time snack.

Pudalangai 250 Grams
Besan 1/3 Cup
Rice Flour 2 Tablespoons
Chilli Powder 1 Teaspoon
Asafoetida A Pinch
Salt To Taste
Oil For Frying

Preparation Method

Wash the snake gourd and scrape of the skin. Remove the seeds in the middle and cut them into rings of 1/2 inch thick. Keep it aside.
Pudalangai Fry Recipe Step 1
In a bowl, add besan, rice flour, chilli powder, salt and mix well. Add water little by little and prepare a batter of medium consistency. Make sure there are no lumps.
Pudalangai Fry Recipe Step 2
Heat oil in a pan and once it is hot, dip the snake gourd ring in the batter and drop them in the hot oil. Keep the flame in medium and fry the pudalangai rings till it turns into golden brown. Drain the oil and transfer it to a plate and serve hot.
