Mint Rice Recipe

We are just back from our vacation and that’s the reason for a long gap since my last post. To start with I am posting a simple recipe – Mint Rice. Its quick and tasty recipe. It will definitely be one of the favorites for all those who like mint flavor. This is one of the easy lunch box recipe ideas. It goes well with onion/ cucumber raita or gravy of your choice.

Pudhina Rice Recipe

Cooking Time :15 Minutes
Serves : 2- 3


Basmati Rice 1 Cup
Mint Leaves 1 Cup
Green Chillies 2 Nos
Ginger A Small Piece
Onion 1 No (Chopped)
Cinnamon 1 Stick
Cloves 3 Nos
Cardamom 3 Nos
Bay Leaves 1 No
Fennel Seeds 1 Teaspoon
Ghee 1 Tablespoon
Lemon Juice 1/2 Teaspoon
Salt To Taste

Preparation Method
Wash the basmati rice and soak it for 15 minutes. Drain the water and keep it ready. Grind mint leaves, green chillies, ginger and half of the chopped onion to fine paste and keep it aside.
Heat a pressure cooker and add ghee. Once it is hot, add cinnamon, cloves, cardamom, bay leaves, fennel seeds and allow it to splutter.

Add the rest of the onion and saute well till it turns into golden brown colour.

Add required salt and then add the ground paste and stir well. Cook till the raw smell goes off. Then add the soaked rice and fry for a minute.

Add 1.5 cups of water and bring it to boil.

Add lemon juice and mix. Close the lid and pressure cook for 2 whistles. Turn off the flame and once the pressure is released, open the lid and gently mix the rice well and serve hot with raita or gravy.

Soaking the basmati rice is important. Do not skip this step.
Ground the masala just before adding it. Because since it contains mint, the masala tends to get darker if it is kept for long time.
