Ragi Idiyappam Recipe

We have been reading from various sources that it is good to include different types of millet in our regular diet. Finally we too made up our mind to follow that dietary habit. This ragi idiyappam is one such recipe which is primarily made of finger millet| ragi| keppai. Earlier, I used to include ragi very very rarely. May be once in 2 –3 months. From now on, planning to have it once a week atleast. This recipe is almost similar to the usual idiyappam which we make with rice flour. Here it is replaced with roasted ragi flour.

Finger Millet Idiyappam Recipe

Cooking Time      : 10 Minutes
Serves : 3


Ragi Flour 1 Cup
Rice Flour 2 Tablespoons
Oil 1 Teaspoon
Grated Coconut 1 – 2 Tablespoons
Ghee 1 Teaspoon
Sugar 1 Tablespoon
Salt To Taste

Preparation Method

Measure 1 cup of ragi flour and dry roast them for 3 – 5 minutes, till you get a nice aroma. This is to get rid of the raw smell of the ragi flour.

Allow the ragi flour to cool down, then transfer it to a bowl. Add rice flour, salt and mix well. Slowly add hot water and keep stirring with a laddle or a spoon. The mixture gets crumbly. Add water little by little. Inbetween add a teaspoon of oil. Knead well to form a soft and non sticky dough.

Make the dough in the form of cylinder and load them into the idiyappam press.Before pressing the idiyappam, grease the idly plate with a drop of oil. Then Press the idiyappam in a round shape in each of the provision in the idly plate.

Add some water to the idly vessel and place the idly plate into it.Close the idly vessel and allow it to cook for 5 - 7 minutes. Do not cook it for long time. Using a spoon take out the cooked idiyappam and transfer them to a plate.

Quickly break the strings and have it ready.When it is hot, pour a tablespoon of ghee, desiccated coconut, sugar and mix them well.
