Vegetable Puff Recipe

I wanted to try vegetable puff recipe using the store bought puff pastry sheets since long time. Finally managed to do it today for tea time snack. Its quite easy to make with puff pastry sheets. All that is required is to prepare the masala with the mixed vegetables. I used green peas, potato and carrots to prepare this masala.If the masala is kept ready, the vegetable puffs can be prepared in less than 20 minutes. It tastes great with ketchup and we enjoyed this snack. I can’t wait to try egg puffs and chicken puffs with these pastry sheets. Will come back with those recipes very soon. Smile

Vegetable Puff using Pastry sheets

Vegetable Puff Recipe
Preparation Time : 20 Minutes
Cooking Time : 15 Minutes + 20 Minutes
Yields : 12 Nos


Puff Pastry sheets 1 No
Onion 1 No (Chopped)
Potato 1 No (Medium Sized)
Carrot 1 No (Medium Sized)
Green Peas 1/4 Cup
Ginger A Small Piece
Garlic 1 Pod
Cilantro / Coriander Leaves 1 Tablespoon (Chopped)
Turmeric Powder A Pinch
Chilli Powder 1 Teaspoon
Coriander Powder 1 Teaspoon
Garam Masala 1/4 Teaspoon
Amchoor Powder 1/2 Teaspoon
Cumin Seeds 1/2 Teaspoon
Oil  and Ghee 1 Teaspoon each
Salt To Taste

Preparation Method

Boil the potatoes till soft, peel off the skin  and slightly mash them, keep it ready. Heat a tawa and add oil. Once it is hot, add cumin seeds and within few seconds, add the chopped onion and saute for couple of minutes.

Add chopped ginger and garlic and saute well for a minute. Add chopped carrot and mix well.

Add green peas and cook for 3 minutes.

Add turmeric powder, chillie powder, coriander powder, salt and mix well.
Add the mashed potatoes and mix well so that the masala gets distributed well.

Finally sprinkle some garam masala and amchoor powder and mix well.

Add finely chopped coriander leaves and turn off the flame and allow it to cool down.
Thaw the puff pastry sheets as per the instruction given in the package.

Cut them into rectangular sizes and place the masala on one side and fold it  and seal them at the edges.

Repeat the process and prepare with all the remain sheets. Preheat the oven to 200 degree Celsius. Line the baking tray with parchment paper and place the puffs on them and place it in the middle rack of the oven.

Bake them for 15 – 20 minutes. Once the outer layer of the puffs turn into nice golden brown, turn off the oven and take the tray out and brush them with ghee if preferred. Serve hot with tomato ketch up or sauces of your choice.

You can add the vegetables of your choice to prepare the masala.
Amchoor powder (Dry Mango Powder) can be replaced with lemon juice or both can be skipped.
