Laddu Boondi Recipe

I like soft and juicy boondis since my childhood days. I have made boondi ladoos quite many times. But somehow couldn’t post the boondi recipe. Finally I am here with this sweet Boondi recipe, a perfect sweet for festival season. I first tried this boondi for last year diwali and the taste was unbelievable. I packed few boxes for our friends and they all liked it very much. Was very happy to hear all positive comments on my first try. From then, I started making it very often.

Sweet Boondi Recipe
Preparation Time  : 10 Minutes
Cooking Time : 20 – 30 Minutes
Yields : 2.5 Cups


Besan/ Gram Flour 1 Cup
Sugar 1.5 Cups
Sodium Bicarbonate (Cooking Soda) A Pinch
Cardamom Powder 1/4 Teaspoon
Cashew 10 Nos
Raisins 10 Nos
Rosewater 1 Teaspoon
Salt A Pinch
Oil For Frying

Preparation Method

Measure Besan and add salt, sodium Bi Carbonate. Mix everything well. Add water little by little mix well without any lumps.  You can also sieve the mixture to get rid of the lumps.Make sure the consistency is thinner than the dosa batter consistency.

Heat a tawa with oil and once it is hot, take a laddle full of batter and pour on the laddle with holes. Spread the batter gently. Keep the laddle little closer to the oil so that the boondis will fall in round shapes.

If the boondis are flattened, then the consistency is very thin, add little more besan and then pour. Fry the boondis till they are cooked. They should not be cooked till it becomes crispier.

Drain the oil and transfer the boondis to a bowl. Repeat the same process and prepare boondis with all the batter and keep it ready.

Roast the cashews and raisins and add it to the boondi and mix everything together.

In another pan, add sugar and add water till it gets immersed.

Bring it to boil.Boil the sugar syrup till it reaches two string consistency. If you place a drop of sugar syrup between the thumb and forefinger. Press it and then release, you should be able to see two individual strings. That is the correct consistency.

At that level, turn off the flame and cardamom powder, rose water.

Then transfer the boondis to the sugar syrup. All the sugar syrup will get abosrbed by the boondis. It will take atleast an hour for the sugar syrup to get absorped completely. Wait till it gets completely cooled down and transfer it to a container and store.
