Prawn Dum Briyani Recipe

I used to cook prawn briyani very rarely. Its been almost a year since I tried prawn briyani recipe. So made it last week. For a change tried this briyani in dum style. Though its time consuming process, I feel its worth doing it as the taste of the briyani was just awesome. It can be served with onion raita. Marinating the prawn for atleast 15 – 30 minutes makes the prawns juicy and tasty, so its better not to skip this step.

Eral Briyani Recipe

Preparation Time : 15 Minutes
Cooking Time : 30 Minutes

Ingredients

Prawns 300 Grams
Basmati Rice 1 Cup
Ginger Garlic Paste 1 Tablespoon
Onion 1 No (Chopped)
Tomato 1 No (Chopped)
Mint Leaves 1/2 Cup (Chopped)
Coriander Leaves / Cilantro 1/2 Cup (Chopped)
Turmeric Powder 1/4 Teaspoon
Chilli Powder 1 Teaspoon
Green Chillies 2 Nos (Slit Lengthwise)
Curry Powder 1 Teaspoon
Cinnamon 2 Small Sticks
Lemon Juice 1/2 Teaspoon
Garam Masala 1/4 Teaspoon
Ghee 1 Tablespoon
Oil 1/2 Tablespoon
Salt To Taste

To Temper

Cinnamon 2 Small Sticks
Cloves 5 Nos
Cardamom 4 Nos
Black Stone Flower (Optional) 1 No
Mace (Optional) 1 No
Star Anise 1 No
Bay Leaves 2 Nos

Preparation Method

Clean and wash the prawns and marinate with ginger garlic paste, turmeric powder, chilli powder, salt, lemon juice. Let it remain for 15 – 30 minutes.
Wash and soak the basmati ricefor 20 minutes.

Heat a pressure cooker and add 1/4 teaspoon of ghee and temper it with bay leaves, cloves, cinnamon, cardamom. Drain the water from the soaked rice and add it . Fry for a minute. Add 2 cups of water and pressure cook for 2 whistles.

In another pan, heat oil and ghee. Once it is hot, temper it with bay leaves, cardamom, cinnamon, cloves, black stone flower, star anise, mace. Add onion and saute well till it turns into golden colour. Add green chillies and fry them well.

Add gigner garlic paste and fry till the raw small goes off. Add tomatoes and cook till it becomes mushy.

Add half of the chopped mint leaves and coriander leaves.

Add chilli powder, curry powder and mix well. Add the marinated prawns and cook for 5 minutes. Add 1/4 cup of water and cook covered by adding required salt. Once the prawn is cooked well, sprinkle some garam masala and turn off the flame.

Take a heavy bottomed vessel and grease the bottom with little ghee. Spread it with prawn masala. Layer it with cooked rice.

add the remaining prawn masala over the rice and sprinkle the remaining mint and coriander leaves. Cover the top layer with cooked rice.

Close the vessel tightly with a lid and reduce the flame to low. Now cook the briyani in dum for 15 – 20 minutes by placing the vessel in a wide pan filled with water. If the water gets evaporated fill it again and cook.
