Coriander Leaves Rice Recipe

I wanted to try this coriander rice recipe since long time. Fresh coriander leaves are good for health and  I make sure that I include this in our diet as frequent as possible. Mostly it would be either coriander chutney or coriander idly. But for a change tried this green variety rice and it was just awesome. Its very simple to make and tastes great with onion or cucumber raita. Adding peanuts and cashew nuts are optional and can be skipped if not preferred.

Preparation Time : 10 Minutes
Cooking Time     : 15 Minutes
Serves : 3

Ingredients

Rice 1 Cup
Coriander Leaves 1/2 Cup (Tightly Packed)
Ginger A Small Piece
Green Chillies 2 Nos
Urad Dhal 1 Tablespoon
Tamarind A Small Lemon Sized
Mustard 1/4 Teaspoon
Peanuts 1 Tablespoon
Cashew (Optional) 5 Nos
Salt To Taste
Oil 2 Teaspoons

Preparation Method

Wash and cook the rice  and keep it aside. Heat a pan and add oil. Once it is hot, add urad dhal and fry for 2 minutes. Add green chillies and ginger and fry for a minute.

Add Tamarind and fry for few seconds and then add the chopped cilantro/coriander leaves.

Fry for a minute and then turn off the flame. Allow it to cool down. Transfer it to a mixer and grind it to a smooth paste.

Heat oil in another pan and once it is hot, add mustard and after it crackles, add peanuts and fry for a minute. Then add cashew nuts and fry slightly. Add the ground paste and saute for few seconds.

Add rice and mix well so that the masala gets distributed throughout. If preferred you can add a teaspoon of ghee at the end and give it a quick mix.
