Chole Masala Recipe

Tried this chole masala in punjabi style for the first time. We both like chick peas very much and mostly I used to make only south Indian recipes with chick peas. For a change tried this channa masala in punjabi style. It tasted great as I prepared this masala with freshly ground spices. Moreover this recipe is very simple to make. We can also prepare this chole masala powder in quite large quantity and store it. It can be served with poori, roti or Naan.

Punjabi Channa Masala Recipe

Cooking Time : 15 Minutes
Serves : 3 - 4


Channa / Chick Peas 1 Cup
Onion 1 No (Large) Finely Chopped
Tomato 2 Nos (Finely Chopped)
Ginger 1 Tablespoon (Grated)
Green Chillies 2 Nos (Slit lengthwise)
Turmeric Powder A Pinch
Chilli Powder 1/2 Teaspoon
Garam Masala 1/2 Teaspoon
Amchoor Powder / Lemon Juice 1 Teaspoon
Cilantro / Coriander Leaves 1 Tablespoon (Chopped)
Salt To Taste
Oil 1 Tablespoon

To Roast and Grind

Red Chillies 5 – 6 Nos
Coriander Seeds 1 Tablespoon
Fennel Seeds 1/2 Teaspoon
Cumin Seeds 1 Teaspoon
Black Peppercorns 1 Teaspoon
Cardamom 4- 5 Nos
Cinnamon A Small Stick
Cloves 3 Nos
Bay Leaves 1 No

Preparation Method

Wash and soak Channa for 8 hours / overnight. Pressure cook the soaked channa for 3 –4 whistle. If cooking in a pan, cook till the channa becomes soft.
In a tawa dry roast all the ingredients mentioned under “ To Roast and Grind” table.

Allow the roasted ingredients to cool down completely and grind them into a fine powder and keep it aside.

In a tawa, add oil and once it is hot, add the chopped onion and saute till it becomes translucent. Add slit green chillies and saute well.

Add grated ginger and saute till the raw smell goes off. Then add finely chopped tomatoes and cook till it becomes mushy.

When oil starts to ooze out from the mixture, add turmeric powder, chilli powder and the ground masala and mix well.

Add required salt and transfer the cooked channa to the mixture along with the stock.

If required, add more water and cook the gravy for 5 – 7 minutes. Finally sprinkle some garam masala and amchoor powder. Turn off the flame. Garnish with finely chopped cilantro.
