Madurai Chicken Briyani Recipe

This style of briyani recipe is from my mom. She prepares vegetable briyani  this way, so tried the same with chicken. Instead of adding the chopped mint and coriander leaves, grinding the fresh mint and coriander along with green chillies gives a nice aroma to the dish. When I was new to cooking, I always had a feel that Briyani is very tough to cook. But after getting to know different types of briyani recipes, I realized that its not like what I thought. I make briyanis very often and I still have lot more different varieties of briyani recipes to try.

Madurai Style Chicken Briyani Recipe

Basmati Rice 3/4 Cup
Chicken 300 Grams
Onion 1 No (Chopped)
Tomato 1 No (Chopped)
Ginger Garlic Paste 1 Tablespoon
Mint Leaves 2 Tablespoons
Coriander Leaves 2 Tablespoons
Green Chillies 2 Nos
Garam Masala Powder 1/2 Teaspoon
Cinnamon 1 Small Stick
Cloves 3 Nos
Cardamom 2 Nos
Bay Leaves 1 No
Fennel Seeds 1/4 Teaspoon
Salt To Taste
Oil 1/2 Tablespoon
Ghee 1/2 Tablespoon

Preparation Method

Wash the chicken and keep it aside. Soak the basmati rice for 20 – 30 minutes. Grind mint leaves, coriander leaves, green chillies to a paste and keep it ready. Heat a pressure cooker / Heavy bottomed pan and add oil and ghee and once it is hot, add cinnamon, cardamom, cloves, bay leaves, fennel seeds and allow it to splutter.

Add chopped onion and fry till it changes into golden brown colour. Then add ginger garlic paste and fry them till the raw smell goes off.

Add tomatoes and cook till it becomes mush and oil starts oozing out from the gravy. At this stage add the ground paste and mix well for a minute.

Add the chicken pieces and mix well and cook for 2 minutes. Then close the pressure cooker and cook for 1 whistle. If required add 1/4 cup of water and cook.

Add Garam masala powder and mix well. Add the soaked rice and saute for a minute. Add around 1.5  - 2 cups of water. Add required salt and mix well. Close the pressure cooker and cook for 3 whistles in high flame. Wait for the steam to get released. Then open and fluff it with a fork and serve with gravy or raita.
