Saffron Flavored Rice Recipe

Saffron rice is something which I wanted to prepare since long time. I tasted it in one of the Indian Restaurants. Since then, it was staying in my “To Try” recipes list. Finally made it and clicked pics as well. But Saffron rice recipe has been pending in my drafts for more than a month now. I kept pushing it back as it seems to be a very simple recipe. However, planned to post it today as I was looking for something to be finished off quickly. It tastes awesome with paneer gravy or gravies with peas, capsicum and mushroom. I served saffron Rice with Paneer 65 and Paneer capsicum curry.

Kesar Rice Recipe

Saffron Rice Recipe
Preparation Time : 5 Minutes
Cooking Time     : 5 Minutes
Serves   : 2


Basmati Rice 1 Cup
Ghee 1 Tablespoon
Cinnamon 1 Small Stick
Cardamom 2 Nos
Bay Leaves 1 No
Saffron 7-10 Strands
Salt To Taste
Milk 2 Teaspoons

Preparation Method

Wash and soak the rice for 30 minutes. Drain the water and keep it aside. Heat a pressure cooker and add ghee. Once it is hot, add cinnamon, cardamom, bay leaves and allow it to splutter.

Add the soaked rice and fry for few seconds. Add around 1.5 cups of water. Add required salt and bring it to boil.

Soak saffron strands in warm milk and add it to the rice and mix well. Close the pressure cooker and cook till 2 whistles. Wait till the steam escapes and fluff it with a fork.

 Soaking the rice is important. So do not skip this.

If you are cooking it in a pan, add water in excess. May be 1/2 – 3/4 cup more.

While cooking in pressure cooker, make sure the flame is set to high and cook only for 2 whistles.

If you prefer, can add roasted cashews for a rich flavor.
