Mangoes are always my favorite and I just love all mango recipes. This Mango Pickle is mouthwatering and a most frequent recipe which my mom makes most of the time during summer.Summer without Mangoes is something I have never been through. Its summer now and here I am with an Instant Mango Pickle Recipe. Since my young age, I used to wait for the mango season every year. Whatever be the curries or side dish my mom makes, I still feel incomplete without this mango pickle. Most of the times, we used to eat more than half the mangoes even before the pickle is made Smile with tongue out. All childhood memories came into my mind as I am making this recipe by myself for the first time. Smile

Mangai Urugai Recipe

Mango Pickle Recipe
Cooking Time      : 5 Minutes
Serves     : 4
Mango 1 No (Small Size)
Chilli Powder 1 Teaspoon
Mustard 1 Teaspoon
Asafoetida A Pinch
Gingely Oil / Sesame Oil 1 Teaspoon
Salt To Taste

Preparation Method

 Wash the mango and cut them into small pieces. Remove the seed in the middle.

Transfer the mango pieces to a bowl and add salt, chilli powder and mix well.

Heat a small pan and add oil. Once it is hot, add the mustard. After it splutters, add the  asafoetida and turn off the flame.

Transfer the temperings to the mango pieces and mix them well. Mango Pickle is ready.

 Adjust the chilli powder according to the spicy level.

Adding the dry fried fenugreek powder at the end, gives a very good taste to the pickle. But make sure you add just alittle of that. Else the pickle will have a bitter taste.
