Brinjal Gravy Recipe

Brinjal Kuzhambu recipe is from my MIL and the ingredients that are used is same as the usual Karakuzhambu. The difference is in the process of cooking. Its like one pot cooking where all the ingredients are added together and cooked.  Whenever I cook a recipe with brinjal, it will be just for me and so I do not make it very often. When I heard this recipe from MIL, I found it very simple and thought of giving it a try. This kuzhambu stays good for couple of days.

Eggplant Kuzhambu Recipe

Brinjal/ Aubergine 1 large no (6 small Nos)
Shallots 7 Nos
Tamarind Lemon Sized
Chilli Powder 1 Teaspoon
Turmeric Powder A Pinch
Coriander Powder 2 Teaspoons
Curry Leaves A Strig
Fenugreek Seeds 1/2 Teaspoon
Fennel Seeds 1 Teaspoon
Asafoetida A Pinch
Sesame Oil / Gingely oil 1 Tablespoon
Salt To Taste

Preparation Method

    Wash the brinjal and cut them into equal sized pieces and soak them in a bowl with water.

   In a pan add fennel seeds, fenugreek, asafoetida and finely chopped shallots.

   Add turmeric powder, chilli powder, coriander powder, curry leaves.

   Soak the tamarind in water and extract the juice. Add it to the mixture and add the brinjal pieces.

   Add salt, mix well and add little water. Turn on the flame and start cooking.

   Cook till the brinjal gets cooked soft and the kuzhambu reaches the required consistency.

   If you like the garlic flavour, few pods of chopped garlic can be added.

   Instead of shallots, normal onion can also be added. But shallots give a good taste.

  Just before turning off the flame, add freshly chopped curry leaves for extra flavor.
