Hot and Crispy Cauliflower Bhajji as evening snack will just be awesome. Bhajjis are always  a quick and perfect snack. I would love to have it as a starter along with a bowl of hot soup. Such a great combo Smile. Bhajji always reminds me of the college days. As my hostel is very close to Besant Nagar Beach, we used to go to beach very often. After playing in the beach for hours, our next stop will be at one of those bhajji stalls. We will just enjoy hot hot bajjis on a breezy sandy beach. On that day, we don’t feel like having dinner at hostel and almost everyone of us will skip. Smile with tongue out
Cauliflower Bhajji Recipe
I did not add any food colour to this recipe. Some prefer to add bicarbonate of soda. But I didn’t add that either. But still it tasted great. It can also be served with variety rice and sambar, rasam.
Cauliflower Fritters Recipe

Cauliflower Bhajji Recipe Preparation Time : 15 Minutes
Cooking Time       : 20 Minutes
Serves   : 4
Cauliflower 1 Small Size
Besan / Gram Flour 1/2 Cup
Rice Flour 2 Tablespoons
Chilli Powder 1/2 Tablespoon
Asafoetida A Pinch
Salt To Taste
Oil For Deep Frying

Cut the cauliflower into small florets and soak them in warm water for 10 – 15 minutes by adding little salt.
In a bowl, add besan, rice flour, salt, chilli powder, asafoetida and mix well with water to form a batter. Make sure the batter is not too thin.

Drain the water from the cauliflower florets and add them to the batter and mix well so that the florets are coated well with batter.
Cauliflower Bhajji Recipe - Step 2Heat a tawa and add oil sufficient enough for deep frying. Once it is hot, add the batter coated caulilfower florets one by one and gently flip them with a laddle and cook till it turns into nice golden brown color. Transfer it to a colander or paper towel to drain the excess oil.

Cauliflower Bhajji Recipe - Step 3

Adding rice flour will make it more crispy. So do not skip it.
Make sure the batter is not thin. If the batter is thin, it will get separated from the cauliflower florets while deep frying.
Do not add too many florets to the oil as it may stick to each other.Deep fry them in batches.
