Potato Rice Recipe

Whenever I end up in shortage of time to prepare lunch, I will always look for some variety rice recipes as they are quick to prepare. While browsing for such recipes, I found potato rice to be interesting and simple. Moreover both of us are potato lovers, which made me to go for it the very same day. The outcome was simply superb!!

Ingredients
Basmati Rice 1 Cup
Potato 1 No (Large)
Urad Dhal 1 Teaspoon
Channa Dhal 1 Teaspoon
Red Chillies 2 Nos
Coriander Seeds 1 Tablespoon
Cashew Nuts 5 – 7 Nos
Asafoetida A Pinch
Turmeric Powder A Pinch
Mustard 1 Teaspoon
Curry Leaves A Strig
Ghee 1/2 Tablespoon
Oil 2 Teaspoons
Salt To Taste

Preparation Method
  • Wash and soak the rice for 15 minutes.
  • Cook the rice by adding 2 cups of water. Do not overcook the rice. Spread them in a wide container and allow it to cool down.
  • Meanwhile boil a potato, peel off the skin and cut them into medium sized pieces and keep it ready.
  • Heat a pan and add oil.
  • Once it is hot, add mustard, curry leaves and wait till it splutters.
  • Also add cashew and roast them slightly.

  • Add the boiled potato pieces, turmeric powder and mix them well.
  • In another pan, add little oil and roast red chillies, coriander seeds, urad dhal , channa dhal. Grind them by adding salt and asafoetida.
  • Add the ground mixture to the potato and cook for 3 minutes.

  • Now add the cooked rice and mix gently so that the masala gets coated well on the rice. Finally add ghee and mix it again.
  • Transfer it to a plate and serve.
