Pulihora Recipe - Andhra Style

Pulihora 1
Pulihora is well known for prasad in temples. It has always been the very usual recipe that my mom prepares when we go for a picnic in my childhood days. Here is the recipe of pulihora in Andhra style.

Raw Rice 1 Cup
Turmeric Powder 1/2 Teaspoon
Curry Leaves 1o Nos
Tamarind Small Lemon Sized
Channa Dhal 1 Tablespoon
Urad Dhal 1/2 Tablespoon
Cumin Seeds 1 Teaspoon
Mustard 1/2 Teaspoon
Peanuts 2 Tablespoons
Red Chillies 3 Nos
Green Chillies 2 Nos
Chopped Ginger 1 Teaspoon
Jaggery 1 Teaspoon
Hing / Asafoetida 1/4 Teaspoon
Sesame Powder 1 Tablespoon (Dry roasted and powdered)
Salt To Taste
Gingely Oil 2 Tablespoons

Preparation Method
  • Wash and cook the rice by adding 1.5 cups of water. Make sure the rice is not overcooked.
  • Spread the cooked rice and sprinkle turmeric powder, few curry leaves, oil and mix well. Allow it to cool down.
  • Heat a pan and add oil. Once it is hot, add mustard and wait for it to splutter.
  • Add channa dhal, urad dhal, peanuts and fry till it gets roasted.
  • Add dry red chillies, ginger, green chillies, cumin seeds, curry leaves, asafoetida and fry for few seconds.
  • Extract the tamarind juice by soaking the tamarind in hot water. Add the tamarind extract, jaggery and bring it to boil.

  • Cook the mixture for 7 minutes, till it becomes thick. Add required salt.
  • Turn off the flame and add the tamarind mixture to the rice and mix gently so that it gets coated well on the rice.
  • Finally sprinkle the roasted sesame seeds powder and mix well.
  • Let it remain for an hour or two so that the flavor gets mixed with the rice.
