Kalkandu Pongal Recipe | Sugar Candy Pongal

Kalkandu Pongal is my hubby’s most favourite. The preparation is almost similar to sarakari pongal except that jaggery is replaced with sugar candy. I prepared this for the first time to give him a surprise. He just enjoyed eating it!!


Ingredients
Raw Rice 1 Cup
Moong Dhal 2 Tablespoons
Sugar Candy 1.5 Cups
Milk 1 Cup
Cashew 10 Nos
Raisins 10 Nos
Cardamom Powder 1/2 Teaspoon
Ghee 3 Tablespoons
Salt A Pinch

Preparation Method
  • Take sugar candy in a mixer jar and grind them to a fine powder. Keep it aside.
  • Heat a pan and add little ghee. Fry the moong dhal till it turns light brown colour.

  • Wash and take rice in the pressure cooker.
  • Add the roasted moong dhal to it.

  • Add 1 cup of milk and 3 cups of water and pressure cook for 3 –4 whistles.
  • Once the pressure is released, mash the contents well.
  • Add the powdered sugar, cardamom powder and mix well.

  • Add ghee little by little and keep mixing for 7 minutes.
  • Finally roast the cashew and raisins in ghee and add it to the rice. Mix everything together.

  • Transfer to the bowl and serve.
