Avarakkai Recipes | Green Hyacinth Beans Stir Fry

This is a very simple recipe and will be a good combination with sambar, rice, curd rice.

Green Hyacinth Beans 150 Grams
Onion 1 No (Finely Chopped)
Green Chillies 2 Nos (Cut into half lengthwise)
Grated Coconut 1 Tablespoon
Mustard 1/2 Teaspoon
Cumin Seeds (Jeera) 1/2 Teaspoon
Turmeric Powder A Pinch
Salt To Taste
Oil As Required
Preparation Method

  • Wash the beans and cut them into small pieces of equal sizes.
  • Heat a pan and add a tablespoon of oil. Add Mustard & Cumin seeds and wait till it splutters.
  • Add green chillies & finely chopped onions and saute them well.
  • Add turmeric powder and then add the cut green beans. Mix well and close the pan for 5 minutes in low flame.
  • Add salt and mix it and leave it for 5 minutes.

  • Add Grated Coconut to the cooked beans and stir well. Transfer it to a serving bowl.
