Vendhaya Keerai Kootu | Methi leaves curry

Last week when I went to Indian store, I saw methi leaves and I grabbed a bunch to try it out. I have heard from my mom that methi leaves are very good for health and many different varieties can be prepared with this. To start with I made kootu with this. Me and my hubby liked it very much.
Ingredients

Methi leaves 1 Bunch
moong dhal 1/4 Cup
Green Chillies 2 Nos
Onion 1 No (Finely Chopped)
Mustard 1/4 Tablespoon
Cumin 1/2 Tablespoon
Grated coconut 2 Tablespoons
Salt To Taste
Oil 1 Tablespoon

Preparation Method
  • Wash and boil the moong dhal and cook till it becomes soft.
  • Wash the spinach thoroughly and chop them into fine pieces.
  • Heat a pan and add oil. Once it gets hot, add mustard and very little cumin seeds.

  • Allow it to splutter and then add green chillies and onion and saute them for 2 minutes.
  • Then add the chopped spinach and cook till the water evaporates completely.

  • Add cooked dhal and mix it well with salt.
  • In the meantime grind the coconut with cumin seeds and have it ready.

  • Finally add the ground coconut mixture to the spinach and turn off the flame.
