Vendaikai | Ladiesfinger Kara Kuzhambu Recipe | Kuzhambu Varieties

Ladiesfinger has always been my favourite since my childhood days. I never get bored of this vegetable. There are days where I used to have ladiesfinger poriyal as evening snack Smile… I just love this be it in any recipe!!
Here is the Kara Kuzhambu Recipe with my favourite veggie…

Ladiesfinger 100 Grams
Mustard 1/4 Teaspoon
Urad Dhal 1/4 Teaspoon
Fenugreek 1/4 Teaspoon
Curry Leaves A Strig
Onion 1 No (Finely chopped)
Tomato 1 No (Finely Chopped)
Tamarind 1 Small Lemon Sized
Chilli powder 1 Tablespoon
Coriander Powder 1.5 Tablespoon
Turmeric Powder A Pinch
Salt To Taste
Oil 2 Tablespoons

Preparation Method
  • Wash and cut the ladiesfingers into equal size pieces and fry them in a pan by adding little oil and keep it aside.
  • Grind the onion to fine paste and keep it aside.
  • Soak the tamarind in water for 15 minutes and extract a thick juice out of it and keep it aside.
  • Heat a pan and add oil. Once it is hot, add mustard, urad dhal and fenugreek.
  • After it splutters, add curry leaves, onion paste and saute them for 2 minutes.

  • Add tomato and after 3 minutes, add chilli powder, turmeric powder, coriander powder& salt and mix well.
  • Once the oil starts oozing out, add fried ladiesfinger and then add the tamarind extract.

  • Add water to a required consistency and allow it to boil till the raw tamarind smell goes off.
  • Transfer it to the bowl and serve.
