Coconut Burfi Recipe | Easy Sweet Recipes

Thengai Burfi Recipe

Coconut Burfi is one of the few sweets which can be prepared in just 10 – 15 minutes. I used to make coconut Burfi quite often at home. This sweet can be stored for a weeks time and it still stays fresh. I prefer using fresh coconut for this recipe rather than desiccated coconut. My mom used to make soft and juicy coconut burfis and I got this recipe from her. This can be prepared during festival time when you are in short of time.

Coconut Burfi Recipe
Preparation Time : 15 Minutes
Cooking Time : 10 – 15 Minutes
Yields : 12 Pieces

Ingredients

Coconut 1 Cup
Sugar 1 Cup
Cashew 10 Nos
Cardamom A Pinch
Ghee 1/4 Teaspoon

Preparation Method

Remove the coconut pieces from the coconut shell and cut off the black part behind. Grind them in the mixer and keep it aside.

Heat a pan and add ghee. Fry the cashew till golden brown and keep it aside. In the same pan add the grated/ground coconut and mix well.

After few seconds, add sugar and keep mixing continuously.

Sugar will start melting and keep mixing it till it becomes little dry and not sticking to the walls.

Meanwhile grease a plate with ghee and keep it ready. Once the mixture becomes to a stage where it does not stick to the walls, transfer it to the greased plate.

Press it firmly so that it is equally spread throughout. Now place the fried cashew on top of  it and press it again. Wait till it becomes little warm and them slice them into pieces of desired shape and serve.

Note

Instead of grinding the coconut, you can also grate the coconut and use them.

The color of the coconut burfi is not pure white because I used brown sugar instead of refined sugar.
