Basundhi Recipe
Basundhi is a cold dessert and I just love it. Basundhi recipe is very simple to make and whenever I have milk in stock, I will go for this dessert recipe. Not a single day I came back without tasting it when we got out for shopping. This is one dessert which I never get bored off. Somehow I had a thought that it cannot be prepared easily at home. But I realized, I was wrong when I browsed for this recipe in the internet. I found it very simple and attempted to give a try right away and it turned out to be a wow!!
Basundhi Recipe with Milk

Preparation Time : 5 Minutes
Cooking Time        : 25 Minutes
Serves     : 3


Milk 3 Cups
Sugar 1/4 Cup
Pistachios 5 Nos
Almonds 5 Nos
Cardamom Powder A Pinch
Saffron Few Strands
Preparation Method

Boil Milk in a heavy bottomed vessel and keep stirring it. Let it remain till the milk reduced to 1/3 of its volume.

Basundhi Recipe -Step1

Add Cardamom and the chopped pistachios and almonds and mix well. Add sugar and boil till the sugar gets dissolved well.

Finally add the saffron and boil for 3 – 5 minutes and then turn off the flame.

Allow it to cool down completely and then refrigerate for an hour or two. Then transfer it to a bowl and serve.

Cardamom can be replaced with a pinch of cardamom powder.

Adding saffron will give a nice flavour and the colour of the sweet changes to a nice yellow colour as it gets boiled and cooled.

Make sure it is completely cooled down to room temperature before keeping it inside the refrigerator.

Adding condensed milk will make the desserts richer. While adding condensed milk, adjust the sugar accordingly.
