Coconut Rice


Whenever I run out of vegetables at home, I opt for cooking variety rices. One such instance happened couple of days back and I prepared 3 different variety rices. Here I am sharing the coconut rice recipe. I will be posting the rest of the recipes shortly. I just love the different colours of the variety rices and most of them are simple to prepare and it can be served with chips, vadagam, papad.

Basmati Rice / Raw Rice 1 Cup
Mustard 1/4 Tablespoon
Cumin Seeds 1/4 Tablespoon
Channa Dhal 1/2 Tablespoon
Cashew Nuts (Optional) 5 Nos
Asafoetida A Pinch
Curry Leaves A Strig
Green Chillies 1 No
Red Chillies 2 Nos
Grated Coconut 1/2 Cup
Salt To Taste
Oil / Ghee 2 Tablespoon


Preparation Method
  • Wash and cook the basmati rice/ raw rice by adding salt and 1/2 Tablespoon of oil and spread the cooked rice on a wide plate and allow it to cool down.
  • Heat a pan and add oil. Once it is hot, add mustard.
  • When mustard starts to crackle, add cumin seeds and then add channa dhal, cashew nuts.
  • Fry them till it turns to golden brown colour.
  • Add curry leaves, red chillies, green chillies, asafoetida. Fry them for few seconds.

  • Add Grated coconut and mix them, cook for 2 – 3 minutes.
  • Finally add the cooked rice, mix everything together and transfer to a serving bowl.
