Chettinad Chicken Dum Briyani

Chettinad cuisine has got numerous flavourful dishes and Chicken Briyani holds a special place. Its mouthwatering and I am sure it will be a super hit among non-veg lovers.


Ingredients

Chicken Drumsticks 2 Nos
Basmati Rice 1 Cup
Onion 1 No (Chopped)
Green Chillies 2 Nos
Mint Leaves A Fistful
Coriander Leaves A Fistful
Garlic 4 Pods (Chopped)
Ginger A Small Piece (Chopped)
Tomato 1 No (Chopped)
Curd 2 Tablespoons
Salt To Taste
Ghee / oil 2 Tablespoons

To Marinate
Lemon Juice 1 Tablespoon
Turmeric Powder A Pinch
Chilli powder 1/2 Tablespoon
Salt To Taste

To Temper
Cinnamon 1 Stick
Cardamom 2 Nos
Cloves 4 Nos
Bay Leaves 1 No
Anise 1 No

Preparation Method
  • Wash the chicken and marinate with the ingredients mentioned under “To Marinate” Table. Marinate the chicken for atleast 1 hour.
  • Heat a heavy bottomed pan / pressure cooker and add ghee or oil.
  • Once it is hot, add the ingredients specified under “ To Temper” table and fry them till a nice aroma comes out,
  • Add chopped onion and saute them for couple of minutes.

  • Add green chillies, mint leaves, coriander leaves and cook them for 2 minutes.
  • Add chopped ginger and garlic and fry them till the raw smell goes off.

  • Add tomatoes and cook them till it becomes mushy.
  • Then add the marinated chicken and mix well. Cook for 3 – 5 minutes.
  • Add curd and mix well.

  • Add around 2 cups of water, salt and add the rice to it.
  • Close with a lid and cook till the water evaporates and the rice it almost cooked.

  • Now cook the briyani in dum for 15 – 20 minutes by placing the cooker in a wide pan filled with water.
  • If the water gets evaporated fill it again and cook.
  • Tasty Dum briyani is ready.
