Carrot Kootu

Here is a simple side dish for rice.


Ingredients

Carrot 1 Cup (Chopped)
Grated Coconut 2 Tablespoons
Red Chillies 4 Nos
Poppy Seeds 1/2 Tablespoon
Curry leaves A Strig
Mustard 1/4 Tablespoon
Asafoetida A Pinch
Salt To Taste
Oil 1 Tablespoon

Preparation Method
  • Wash the carrot and cut them into pieces and cook them well.
  • Meanwhile grind coconut, 2 red chillies and poppy seeds to a fine paste.

  • When the carrot is well cooked, add salt, the ground paste to it and mix well and cook for 5 more minutes.
  • In another pan, heat oil and add mustard. Wait for it to splutter.

  • Add red chillies, curry leaves, red chillies, asafoetida and fry them.
  • Transfer the tempered things to the cooked carrot mixture.
  • Mix well and transfer it to a bowl for serving.
