Kuzhi Paniyaram

Kuzhi Paniyaram is one of the recipes from Chettinad Cuisine. If all the ingredients are in correct proportion, it will come out well. It will be very spongy and tastes sweet.


Ingredients

Raw Rice 1/2 Cup
Boiled rice/Ponni Rice 1/2 Cup
Urad Dhal 3 Tablespoons
Fenugreek seeds 1/2 Tablespoon
Jaggery 1/4 Cup

Preparation Method
  • Wash and soak raw rice, boiled rice, urad dhal and fenugreek in water for around 3 hours.
  • Grind everything together by adding enough water to a very fine consistency.
  • The batter should be fermented for atleast 8 hours before making paniyaram.
  • After it has been fermented, take powdered jaggery and add little water. Turn on the flame and stir it till the jaggery gets dissolved completely.

  • Then  filter the jaggery syrup and add the syrup to the grind batter. Mix everything together.
  • The consistency of the batter must be slightly thinner than the dosa batter consistency.
  • Heat the Kuzhi paniyaram pan and add little oil to all the slots.

  • Once it is hot, pour the batter into each of the slots and wait till it gets cooked.
  • Then turn it to the other side and cook till it turns to golden brown colour.

  • Once both the sides are cooked, transfer it to a bowl and serve.
