Vendaikai Moor Kuzhambu Recipe

Moor Kuzhambu is yet another easy kuzhambu variety. As we always used to make either sambar or kara kuzhambu, this moor kuzhambu can be tried once in a while. Ladies Finger is the best vegetable for moor Kuzhambu. It can also be prepared with Ash guord. When I end up with too much of curd with close expiry date, this recipe will be my choice. It goes well with hot rice and some spicy curry or fry.

Ladiesfinger Moor Kuzhambu Recipe

Preparation Time : 10 Minutes
Cooking Time      : 15 Minutes
Serves  : 4


Buttermilk 1.5 Cups
Ladies Finger 5-6 Nos (cut into pieces)
Cilantro/Coriander Leaves A Fistful(Finely chopped)
Curry Leaves A Strig
Channa Dhal 1/2 Tablespoon
Rice 1/4 tablespoon
Toor Dhal 1/4 Tablespoon
Ginger A small piece
Cumin Seeds 1/2 tablespoon
Greenchillies 2 Nos
Asafoedita A Pinch
Turmeric Powder A Pinch
Mustard 1/4 Tablespoon
Salt To Taste
Oil 1 Tablespoon


Preparation method

Wash and soak channa dhal, urad dhal and rice for around 30 minutes. Meanwhile heat a pan, add oil and start frying the cut ladiesfinger.

Grind the soaked dhal and rice along with cumin seeds, ginger and green chillies to a fine paste.

In a bowl take buttermilk and add turmeric powder,salt to it.


Add the ground mixture to the buttermilk and mix well.

Add the fried ladies finger to the buttermilk.

In a pan add oil and then add mustard. Allow it to splutter. Add curry leaves, asafoedita and drop them into the buttermilk mixture and mix well.

Now turn on the flame and keep the mixture and cook till a froth starts to appear around the sides. Also add finely chopped coriander leaves and curry leaves.

Adding fresh curry leaves and coriander leaves adds extra flavour to the kuzhambu, So do not skip it.

Do not boil the mixture for long time. Watch closely and turn off the flame as soon as slight froth appears on the sides.

Do not have the buttermilk too thin.

Make sure the ladiesfinger is fried well before adding it to the buttermilk.
