Tomato Rice Recipe

This is one of the recipies which I frequently pack for lunch. It stays fresh and juicy even if we have it longtime after it is prepared. It tastes good with raitha, kuruma.


Basmati Rice 1 Cup
Tomato 4 Nos (Finely chopped)
Onion 1 Number (Finely chopped)
Green chillies 1 No (cut lenghtwise)
Mint leaves A Fistful (Finely chopped)
Coriander Leaves A fistful (Finely chopped)
Turmeric powder A Pinch
Chilli Powder 1/2 Tablespoon
Coriander Powder 1/2 Tablespoon
Cinnamon 2 sticks
Cloves 3 Nos
Bay Leaves 1 No
Ginger Garlic Paste 1/4 Tablespoon
Salt To Taste
Ghee 1 Tablespoon
Oil 1 Tablespoon
Cashew (Optional) 5 Nos


Preparation Method

  1. Wash and Cook Basmati rice in a pan by adding 2.5 cups of water. Drain the water and allow it to cool down.
  2. In a pan add ghee and roast the cashew to light brown colour.
  3. Transfer the cashew to a plate. Add oil and mix it well with ghee.
  4. Add cinnamom, cloves, bay leaves and allow it to splutter.
  5. Then add onion, greenchillies, ginger garlic paste and saute them well for couple of minutes.
  6. Grind the tomatoes to a fine paste and add them now.
  7. Cook them well till the oil oozes out from the mixture.
  8. Now add mint and coriander leaves. Mix them well.
  9. After a minute, add the turmeric powder, chilli powder, coriander powder and salt.
  10. Mix everything together and cook them for 3 more minutes.
  11. Finally add the rice to the mixture and mix it well.
  12. After a minute turn off the flame and add the roasted cashews and transfer it to a plate for serving.
