Rava Kesari

This is the sweet that always strikes my mind, whenever we have guests. Not because it is easy, but also it tastes really well and looks colourful.
Ingredients
Rava/Sooji 1 Cup
Sugar 2 Cups
Cashew 10 Nos
Cardamom Powder A Pinch
Ghee 4 Tablespoons
Orange Food Colour A Pinch
Water 3 Cups
Preparation Method
  • Heat a tawa and add a tablespoon of ghee, fry the cashews and keep it aside.
  • To the same ghee, add the rava/sooji and fry till it turns to very light brown colour.

  • In the meantime, heat 3 cups of water in have it ready.
  • Pour the hot water to the rava and keep mixing without any lumps.
  • Mix orange food colour in little water and add it to the rava.
  • Cook for around 5 minutes, till the rava gets cooked well.
  • Now add sugar by constantly stirring so that lumps are not formed.
  • Add cardamom powder. Start adding ghee little by little and keep stirring.
  • Finally when it comes to a stage where it doesn’t stick to the tawa,turn off the flame and add the roated cashews.
  • Transfer to a bowl and serve.
