Lemon Rice Recipe | Variety Rice Recipes



Lemon Rice 9
Lemon Rice is one of the Variety rices that can be prepared in less than 10 minutes if we have the rice cooked. I prepared this recipe when we went for a picnic last weekend. We had it with potato chips. Lemon rice goes well with many sides like Coriander chutney, mint chutney, Channa fry, potato fry.
Ingredients

Cooked rice (Steamed Rice) 2 Cups
Lemon 1 No
Turmeric powder A pinch
Channa Dhal/Bengal Gram 1 Tablespoon
Urad Dhal 1/2 Tablespoon
Peanuts 1 Tablespoon
Red Chillies 5 Nos
Curry leaves 1 Strig
Asafoetida A pinch
Mustard 1/4 Tablespoon
Salt To taste
Oil 2 Tablespoons

Preparation Method
  • Cut the lemon into halves and squeeze out the juice. Add turmeric powder, salt and mix well.
  • Heat a pan and add oil. Add Mustard and after it splutters, add channa dhal, urad dhal and fry till they change into golden brown colour.

  • Add Peanuts, red chillies, curry leaves and asafoetida and mix well.
  • Allow it to cool down and then transfer the contents to the bowl containing lemon juice.
  • Meanwhile have the rice cooked and cooled down.
  • Then add the mixture to the rice and mix well and transfer it to a serving bowl.

Tips
  • Cashew fried in ghee can be added at the end.
  • Do not pour the lemon juice to the oil. Always transfer the temperred items to the lemon juice.
  • If the rice is cooled down before mixing the lemon mixture, it may not breakdown.
