Drumstick Sambar Recipe

South Indian Sambar Recipe

Drumstick sambar is most favourite of all the sambars. Whenever I prefer to cook sambar almost 90% it will be the sambar with drumstick. Luckily, drumsticks are available at nearby Indian stores. So during my weekly shopping, I buy few of them and stock up in the refrigerator. The nice flavour of the drumstick spreads across the kitchen when it is being cooked. It goes well along with hot rice, idly, dosa, Venpongal. This drumstick sambar recipe can be used to prepare sambar with various other vegetables like raddish, carrot, brinjal, chayote, pumpkin, ashgourd.

Drumstick Sambar Recipe
Preparation Time : 10 Minutes
Cooking Time      : 20 Minutes
Serves : 4

Ingredients

Toor Dhal 1/4 Cup
Drumstick 1 No (Cut into equal length pieces)
Onion 1 No (Cut into Pieces)
Tomato 2 Nos (Cut into Pieces)
Coriander leaves/Cilantro little
Turmeric Powder A Pinch
Chilli Powder 1/2 Tablespoon
Coriander Powder 1.5 Tablespoons
Tamarind 1 Small lemon sized
Mustard 1/4 Tablespoon
Cumin Seeds 1/4 Tablespoon
Green Chillies (Optional) 1 No
Asafoetida A Pinch
Oil 1 Teaspoon
Salt To Taste
Preparation Method

Pressure cook the toor dhal by adding little turmeric and cumin seeds, asafoetida. Mash them well. Extract thick tamarind juice by soaking tamarind in water for around 10 minutes.

Heat a pan and add oil. Once it is hot, add mustard and allow it to splutter.  Add onion, slit the green chilli into half and add it. Saute them well for a minute.

Add tomato and after 2 minutes, add Drumstick pieces.

Add chilli powder and coriander powder and mix them well. Add the tamarind jucie and bring it to boil.

Add salt and finally add the boiled and mashed dhal. Add enough water and bring it to boil. Mix everything well and cook for 10 – 15 minutes. Finally add the chopped cilantro/coriander leaves and turn off the flame.
