Aviyal is a curry made using a mixture of vegetables cooked with coconut. It typically originated from Kerala located in southern part of India. It tastes even more delicious when it is cooked with coconut oil.It is the best side dish for Adai Dosa. It also goes well with any type of rice.

Any vegetables of your choice could be added except few like Ladiesfinger, bitterguord etc. I have used below list of vegetables all together weighs around 250 grams cut into equal sized pieces

Green Peas
Raw Banana
Cluster Beans
Ash Guord

Coconut 1/4 Cup (Grated)
Cumin Seeds 1 Tablespoon
Green chillies 3 Nos
Curd 1/4 Cup
Coconut oil 1 Tablespoon
Salt To Taste

Preparation Method
  1. Boil all the vegetables by adding sufficient water either in a pressure cooker/ pan.
  2. Grind the coconut, cumin seeds and greenchillies to a fine paste.
  3. Add the grind mixture to the boling vegetables when it is half cooked.
  4. Cook them for few more minutes by adding salt.
  5. When it is completely cooked,turn off the flame and add curd and mix well.
  6. Finally heat a tablespoon of coconut oil and add it to the mixture.
  7. Serve with Sambar rice/ adai dosai.
