Rava Kesari Recipe

Rava Kesari is one of the sweet recipes that can be prepared in very less time. Though its one of the quick recipes, it tastes very delicious. I used to make it quite often as we both like it. I completely stopped adding artificial food colours to any of the recipes. Since we got used to  kesari with orange/yellow colours, I replaced the food colours with a generous pinch of saffron which gives a nice golden yellow colour.

Preparation Method
Heat a pan and add a 1/2 tablespoon of ghee and oil. Once it is hot, add cashew and raisins and fry them till it turns into light golden brown colour.

To that add sooji/rava and roast them till you get a nice aroma and slight change in colour.  Stir continuously so that the rava doesnt get burnt. Add 1.5 cups of hot water and mix well. Add few saffron strands.

Allow the rava to get cooked completely. Then add sugar and mix well immediately so that there are no lumps.

Finally add cardamom powder, remaining ghee and give it a mix for a minute and turn off the flame.

After adding sugar, do not cook for long time. Turn off the flame when the consistency is slightly loose. It will become thick once it cools down.
You can reduce the quantity of sugar by 1- 2 tablespoons if preferred.
Adding saffron is optional.
Always add hot water as it will make the kesari soft and nice.

Oyester Mushroom Gravy Recipe

I used to see different varieties of mushroom in the vegetable section. But so far tried only couple of those varieties. Recently my mom told me that she got sippi kalan in the market and made gravy out of it. She said it tasted great and asked me to give it a try. I got the recipe from her and tried this oyester mushroom gravy. We both enjoyed it very well. It can be served with rice or chappathi.

Cooking Time  : 30 Minutes

Oyester Mushroom 150 Grams
Tomato 1 No
Curry Leaves 1 Sprig
Oil 1 Tablespoon
Turmeric Powder A Pinch
Salt To Taste

 To Grind

Shallots 5- 6 Nos
Coconut 2 Tablespoons
Ginger 1 Small Piece
Garlic 2 Nos
Cinnamon 1 Small Piece
Cloves 2 Nos
Cardamom 1 No
Fennel Seeds 1/4 Teaspoon
Cumin Seeds 1/4 Teaspoon
Chilli Powder 1 Teaspoon
Coriander Powder 2 Teaspoons

Preparation Method
Wash the mushroom and keep it aside. Grind the ingredients specified under “To Grind” table to a paste and keep it ready. Heat a pan and add oil. Once it is hot, add curry leaves.

Add the ground masala and mix well. Add required salt and turmeric powder and cook for 2 minutes.

Add chopped tomatoes and cook the masala till oil oozes out from the sides.

Add washed mushroom and mix well. Cook it for 5 Minutes.

Add some hot water and bring it to required consistency. Boil the gravy till the mushroom is cooked well and the oil starts to float on the top. Turn off the flame and garnish with chopped coriander leaves.

Chilli Powder and coriander powder can be replaced with whole dry chillies and coriander seeds.
This recipe can be used to make gravy with other mushroom varieties as well.

Salmon Fish Fry Recipe

This salmon fish fry recipe is very simple to make. Considering the health benefits of salmon, we make sure we include it in our meal plan atleast once a week. I used to buy only salmon fillets as it is easy to clean and cook. Every week I do try out different recipes with salmon. Whenever I make a salmon fry, I get a feel that the masalas doesnt get deep inside the fillet eventhough its marinated for hours. So for a change I did the same process by making mini fillets out of the big fillet. This has worked out so well and the fry turned out to be super tasty and crispy.

Garlic 2 Pods
Chilli Powder 1 – 2 Teaspoons
Coriander Powder 1/2 Teaspoon
Cumin Powder 1/4 Teaspoon
Fennel Seeds Powder 1/ Teaspoon

Salt To Taste
Oil 1 Tablespoon
Curry Leaves (Optional) A Sprig

Preparation Method
Remove the scales from the fillet and cut them in to small pieces. Wash the fish pieces 2-3 times by adding a pinch of turmeric powder and little salt.

Grind garlic, chilli powder, coriander powder, cumin powder, fennel seeds powder to a fine paste. Add turmeric powder and salt to the ground paste and mix well. Marinate the fish in the ground masala for atleast 1 hour.

Heat a pan and add oil. Once it is hot, add fish pieces one after the other. Spread some curry leaves.

Pongal is one of our favorite breakfast recipes and I used to make it atleast once a week. As I have loads of different varieties of millets in stock, I started trying out recipes using them and its one such recipe. Its a quick recipe and can be prepared for breakfast on busy weekdays. It tasted almost similar to the usual rice pongal. It can be served with coconut chutney and sambar.


Barnyard Millet Pongal Recipe
Preparation Time : 10 Minutes
Cooking Time : 20 Minutes
Serves : 2


Kuthiraivali 1/2 Cup
Moong Dhal 2 Tablespoons
cashews 5 Nos
Peppercorns 2 Teaspoons
Cumin Seeds 1 Teaspoon
Ginger Small Piece (Chopped)
Asafoetida 1/8 Teaspoon
Ghee 2 Teaspoons
Salt To Taste

Preparation Method

Measure little millet and monng dhal. Wash them and keep it ready. Heat a pressure cooker, Add the millet and dhal and fry for few seconds. Wash them couple of times. Then add around 2 cups of water, little cumin seeds,1/2 teaspoon of ghee and salt. Kuthiraivali-Pongal-recipe-step1

Bring it to boil and pressure cook for 3 whistles. Heat a pan and add ghee.


When it is hot, add crushed pepper and allow it to crackle. Then add chopped ginger, curry leaves, asafoetida, cashews, cumin seeds and fry for few seconds


Add the temperings to the cooked millet and dhal and mix well. Serve hot with chutney of your choice.

Bitter gourd fry is a simple to make recipe suggested by my mom. Its been months since I bought bitter gourd. When I went for shopping last week, I saw bittergourd so fresh and green and grabbed couple of them. Made this crispy bitter gourd fry for lunch to serve along with sambar rice. I loved the combo and this version of bitter gourd fry tasted nice with much less bitterness than usual.

Bitter Gourd 250 grams
Garlic 5 Pods
Chilli Powder 1.5 Teaspoons
Coriander Powder 1 Teaspoon
Turmeric Powder 1/4 Teaspoon
Salt To Taste
Oil 1 – 2 Tablespoons

Preparation Method
Wash the bitter gourd and slice them into pieces of medium thickness. Soak the sliced bitter gourd in a bowl of warm water with some salt and turmeric. After 5 minutes, drain the water and keep the bitter gourd aside.

Grind Turmeric powder, chilli powder, coriander powder, garlic and salt to a fine paste. Add the ground masala to the bitter gourd and mix well. Marinate them for 5 – 10 minutes.

Heat a dosa pan and drizzle some oil and place the bitter gourd pieces and fry them. Once it is cooked, turn it to the other side and cook till it get roasted. Transfer it to a plate and repeat the same in batches.

While grinding the masala, you can add couple of shallots if preferred.
Spice level can be adjusted according to your taste.
Do not slice the bittergourd too thin as it may get stuck to the pan while frying.

I wanted to try making homemade khoya since long time, but kept postponing as its very time consuming recipe. However few days back, I planned to make gulab jamun from scratch. Since khoya is one of the main ingredients for making gulab jamun, I made it and also clicked some pictures and decided to share the recipe here. This khoya can also be added in many other desserts/sweets recipes for enhancing the taste and richness of the recipe.

Whole Milk / Full Fat Milk 1 Litre

Preparation Method

Add milk to a heavy bottomed wide pan / Non stick pan and bring it to boil.

Once it starts to boil, reduce the flame to medium and keep stirring once in few minuteand scrape of the  milk solids sticking to the sides of the pan.

The volume of the milk starts to decrease gradually and the consistency becomes thicker.
The colour of the milk starts to change to dark cream in colour.

At a stage bubbles start to appear, from then you have to very careful and start stirring it continuosly so that it doesnt get burnt.

On continuos stirring, you will reach a stage where the milk gets thickened well and also it doesnt stick to the sides or bottom of the pan. Thats the consistency of khoya. Immediately turn off the flame and transfer the khoya and allow it to cool down. Transfer the khoya to a clean and dry airtight container and refrigerate them. This khoya can be stored for up to a week.

Always use only whole milk/full fat milk for preparing this khoya
Non-Stick pan will be easier as the milk wont get stuck to the sides much.
Stirring it continuosly once it starts to thicken is very important to prevent it from getting charred.

If I have plans to make Pizza, I used to cook this simple pizza sauce the day before and refrigerate them. This time I had lots of cherry tomatoes in stock so I tried making this sauce using that. It turned out really well. This sauce can be stored in refrigerator for upto a week.

Cherry Tomatoes 500 Grams
Garlic 2 Nos
Dried Basil 1 Teaspoon
Dried Oregano 1 Teaspoon
Ground Black Pepper 2 Teaspoons
Olive Oil 1 Tablespoon
Salt To Taste
Sugar 1 Teaspoon

Preparation Method

Heat a pan and add olive oil. Once it is warm, add chopped garlic and saute for few seconds. Then add dried basil, little pepper powder and give it a mix. Then add the washed cherry tomatoes.

Cherry tomatoes can be added as whole, as it gets soften and mashed up when it gets cooked. Keep stirring now and then. Once the tomatoes has been mashed well, add required salt and sprinkle dried oregano.

Add sugar and cook till the sauce gets cooked completley. When its done, the oil starts to seperate and you can see a glazy look. Grilled Broccoli Recipe

Here is quick, easy and tasty grilled broccoli recipe. Though I am not a great fan of broccoli, we used to buy it quite often considering its nutritional value. So far I have tried making Broccoli Paratha, Broccoli masala (I am yet to post that recipe). For a change, I attempted making this grilled broccoli. It tasted great and this recipe doesn’t require more oil which is another good thing. It can be served hot as a starter.

Preparation Time : 30 Minutes
Cooking Time : 15 Minutes
Serves : 2


Broccoli 1 No (Small Size)
Capsicum 1 No
Onion 1 No
Curd 1 Tablespoon
Ginger Garlic Paste 1 Teaspoon
Besan Flour 1 Teaspoon
Corn Flour 1 Teaspoon
Tandoori Masala 1 Teaspoon
Chilli Powder 1/2 Teaspoon
Pepper Powder 1/2 Teaspoon
Salt To Taste
Oil 1- 2 Teaspoons

Preparation Method

Cut the Broccoli in to medium sized florets and soak them in warm water with some salt added in it. After 5 minutes drain the water and keep it ready. Cut the capsicum and onion in cube sized pieces and all vegetables to a bowl.

In a plate mix all the ingredients mentioned in the above table (except oil) to a fine paste.

Coat all the vegetable with the masala and marinate them for 15 – 20 minutes. Then take Skewers and start piercing the broccoli, capsicum, onion through it and repeat the same till the end of the skewers. Meanwhile Preheat the oven to 200 degree celicus.
  Keep the skewers in a pan layerd with foil and brush some oil on the top and place the tray in the  oven. Allow it to cook till the broccoli is cooked well.It took around 15 minutes for me. If required just rotate the skewers in between for even cooking. Once it is cooked, carefully remove the tray from the oven and serve hot.

If you are using wooden skewers, just soak them in water for 30 minutes before using. So that it don’t get burnt while keeping in the oven.

Make sure the curd is thick. Hung curd is most preferred.
